Blue Sea Kale is also known as Colewort or scurvy grass and has been in cultivation since the 1600’s. Blue Sea Kale is native to the coastal areas of Europe and the Mediterranean. Blue Sea Kale was a very popular vegetable during the Victorian Era and was even grown by Thomas Jefferson at Monticello, but Blue Sea Kale waned from popularity due to it’s short ‘shelf life’. Today. Blue Sea Kale is grown for its ornamental value as well as it’s edible attributes. Blue Sea Kale leaves are an eye catching silvery blue and the plant produces fragrant white flowers that are a great nectar source for pollinators. All parts of Blue Sea Kale are edible. Young leaves can be added to salads as well as the seed pods, which impart a crunchy nutty-like flavor. Stalks are often cooked like asparagus and the roots can be blanched and served up like broccoli or other brassicas. Blue Sea Kale makes an excellent addition to the perennial vegetable or ornamental garden.
